Nachos have been treated as a snack ever since their introduction. Over the time, people have started making some dishes out of nachos that can enhance the taste of nachos and can make it a bit heavier snack. There are various ways to make gourmet nachos for your family and friends. The following is a breakfast recipe that utilizes nachos and presents it as a healthy breakfast option.
Nachos skillet for breakfast
Who doesn’t like a healthy yet tasty breakfast? This dish utilizes nachos, eggs, mozzarella, spinach and cherry tomatoes. The following ingredients will help you make up to 4 servings of this dish: –
- Olive oil (2 tablespoons)
- 1 Diced onion Finely chopped leeks (White part only)
- Black pepper and salt
- 6ounces of baby spinach
- 4 eggs
- Juice of 1 lemon
- Corn nacho chips (7 ounces)
- 10 cherry tomatoes, cut in half
- 8 ounces of mozzarella cheese, thin slices
You will need to preheat your oven to a temperature of 350° F and heat up a sauté pan on medium flames. Once the pan gets hot, add 1 tablespoon olive oil to it and swirl it all around. Now add the onion and leeks along with salt and cook until it gets translucent. Now add the spinach and continue cooking until the spinach gets wilted and coated in oil, add lemon juice and continue cooking. Take a cast iron skillet and evenly arrange the nachos on it and cover them up with half of the vegetables you have cooked and spread it evenly.
Spread Mozzarella cheese all over it as well and spread the remaining vegetables on the top and make small wells between them. Fill these wells with eggs. Mix halved tomatoes, 1 tablespoon olive oil and salt and pepper in a bowl. Mix it well and spread it evenly on the iron skillet and throw it in the oven for 15 minutes and your breakfast is ready.
